Sesame Glazed Salmon with Asian Orange Slaw Recipe
Prep & cook time: 45 mins. (4 servings)
YOUR LOCAL FRESH SHOPPING LIST:
- 3-4 Salmon Fillets (3 large or 4 small)
- 1/2 Packet (about 2 T.) Spitfire Gourmet Zesty Sweet Tang
- 16 oz. chopped Cabbage
- 3 Scallions
- 1 julienned Carrot
- 1 T. Fresh Cilantro, chopped
- 11 oz. can Mandarin Oranges
- Cooking Spray
- Sesame Oil
- EVOO (Extra Virgin Olive Oil)
- Rice Vinegar
Preheat oven to 425°. Place Salmon Fillets in a rimmed baking pan (spray pan with cooking spray first), and baste tops with about 2 Sesame Oil. Sprinkle half Spitfire Gourmet Zesty Sweet Tang on top, and bake for 8-12 mins, until golden & salmon flakes with a fork.
In a large bowl, whisk together Olive Oil, Sesame Oil, Rice Vinegar, remaining Spitfire Gourmet Zesty Sweet Tang.
Gourmet Tip: It’s worth the trip to a gourmet store for good Balsamic Vinegar (NOT Balsamic Glaze). It will thicken and sweeten with heat, turning to a nice caramelized consistency. Be sure to stir it while cooking, so it doesn’t get too thick and gooey.
Mix sauce with chopped Scallions (white and green parts), Cilantro, Cabbage, Carrots & Mandarin Oranges (drained).
