Sweet & Tangy Mashed Sweet Potatoes

YOUR LOCAL FRESH SHOPPING LIST:

♦ 2 T. (1/2 packet) Spitfire Gourmet Sweet & Tangy
♦ 2 lbs. Sweet Potatoes
♦ 1/2 cup chopped Pecans
♦ 4 T. Brown Sugar, divided
♦ Vanilla
♦ 2 Eggs
♦ Butter
♦ Half & Half

INSTRUCTIONS:

1. Mix 2 T. (1/2 packet) Spitfire Gourmet Sweet & Tangy into 2 T. melted Butter, 1/4 cup Half & Half, 2 T. Brown Sugar, 1 tsp. Vanilla and 2 Eggs.

2. Peel and cut 2 lbs. Sweet Potatoes into large chunks. Boil until soft, then drain.

3. Blend all together until smooth. Place in baking dish, and top with a mixture of 1/2 cup Chopped Pecans and another 2 T. Brown Sugar. Bake uncovered at 325º for 20 minutes.
